Somebody may have noticed that Chef Stephy has not been raving about her latest food creation lately. That's because Chef Stephy hasn't had time to hardly cook soup in the microwave lately, I've been that busy. OK, not really that bad...I did make pancakes tonight for supper, but who wants to see pancakes on a blog. I made spaghetti over the weekend, but who cares about spaghetti....(Actually, I did make some really good sauce to go on said spaghetti - I mixed ground beef, pizza sauce, canned tomatoes, a jar of spaghetti sauce, sauteed onions and green peppers, salt, pepper, italian seasoning, and a dash of sugar....I think I could have poured it on bread and it would have tasted good!
Seriously though...my life has ran on warped speed lately, and the last 3 days I have just vegged quite a bit. I needed the recoup, desperately....so I have spent the last few days, reading, watching Waltons and Househunters, playing the piano, listening to Tapes, and just relaxing. I didn't even go to church yesterday, I stayed in all day except to make a Sonic run for lunch, and just chilled with my Little Man. I woke up feeling refreshed, but not quite ready to go back to warp speed again. However, after a very hard, stressful day in the office today, not getting out in time, and then coming home with a headache, I sat in the recliner and barely moved for 3 hours. Now that's some serious vegging.
So, while I have no yummy recipe to share, no funny anecdote to tell about Little Man's latest adventures (he was uber-excited tonight, by the way, because one of his tadpoles is growing legs!), not feeling on top of the world and ready to share some fabulous testimony - although everything Christ has done for me is fabulous, and I'm always ready to tell someone that!
what I do have to share is this -
God is so good, we are blessed, my body is playing catch-up with the rest of my life, I have a beautiful son, my dog is too sweet, my mom is coming "home" for the summer next weekend- to which I can't wait, and the Lord has blessed me abundantly! The laundry will take care of itself - I've got the important things in check.
Ciao!

sounds like everyones life is chaotic these days...someone once told me that the devil uses ordinary normal day to day things to keep us busy, so that we dont have time for our brothers and sister, the tapes, and prayer. Thats exactly the rut Im in right now.
On another note: I made the creamy enchilada recipe you posted. Hugo LOVED it. Ill be making them again soon! I added a little green salsa.
so true girl, so true. seems like it's hard to find time to even pray, and yet it's a must! Signs of the times I suppose. I don't remember life being this crazy even 5 years ago.
Glad H. loved the enchiladas. I love them too! they are my favorite chicken enchilada recipe!
love ya girl. God bless!
