Chickenetti a la cheese!!

For lunch today I decided to throw together an easy  but yummy dish called Chickenetti. It takes me almost an hour from start to finish but it is so worth it. I've made this before, and the first time I had it was actually a variation called Mexican spaghetti, but it had green peas in it, of all things. It was good, but I started making it without green peas, and it's much better.
For this dish, which makes a medium casserole dish (8" x 10") full, I used two boneless chicken breasts. I boiled them and then cubed them. I also put on a small box of spaghetti to boil. On the third burner, I took a 16 oz block of Velvetta Cheese, 1/2 can of Ro-Tel tomatoes with green chiles, and 1/2 can of cream of chicken soup, and melted in a creamy cheesy mixture. (Do add the juice in with the Ro-Tel!) When these three pots are done, I mixed them all together, pour into the casserole dish, top with some shredded cheddar cheese, and into the oven at 375 degrees for about 12-15 minutes.
I recommend letting it cool for a few minutes, just to let the cheeses set up a bit. Even though it might take a little time to prepare, it's easy, you can prepare all the ingredients all at once, and it is so yummy!  AND - - the best part is I actually took a picture this time!! Yay for me!!

Until the next time...
Ciao!
