What's on the menu....

You know life might be a tad bit inane when you feel the need to blog about chicken fries, but I was excited about discovering these, and since it's a new thing, I'm going to give it a shout out. Aldi's carries chicken fries. They look just like french fries except they are made of chicken breast. They are really really good, surprisingly. (That was lunch today, along with some corn on the cob - which explains my need to give a shout out.)
I knew I needed to cook supper (as opposed to the cereal or sandwiches I sometimes get by with on Wednesday nights, before church) because I wanted to take my lunch tomorrow, so I thawed out some pork chops and made my breaded chops with gravy that I made a week or so ago. Still yummy; in fact, Little Man says they were "better" than before, although the only thing I did different was added some garlic and pepper medley for seasoning. Throw in some corn, and green beans seasoned with bacon grease (Paula Deen doesn't have the market on cooking with cholesterol you know!) and call it a meal. I'm really proud of myself, because I've been making a concerted effort to add some kind of veggies to every meal. And almost sticking to it!
Dessert was one of my favorites - cornflake bars. I've made these for years, and I could almost eat the whole pan at one setting....I take 1/2 stick of butter and melt it in a big (preferrably non-stick) pot. When it's melted, add 1 tsp vanilla and a bag of mini marshmallows (the mini ones melt faster than the big ones). When that's about halfway melted down, add 1/2 to 3/4 cup of peanut butter. I prefer smooth, but crunchy would work. When all that's almost melted take it off the heat and add regular (not frosted) corn flakes to the pan and stir, just like you would rice crispies. I like mine ooey-gooey, so I add less corn flakes. Put in a greased pan, pat it down with a greased spoon (or greased hands is what I do), and when it's cooled, cut into squares. It's very reminiscent of rice crispie treats, except you add the peanut butter, and the corn flakes give it a different taste and texture. They are easy, and you can add other things too, like mini M&M's (add at the very end as you are pouring into the pan), butterscotch chips, or top with streams of melted chocolate! Easy to make, not messy to handle, and yum yum yummy!
Ciao!
